Lemon Chicken Recipe

When a large, heavy frying pot is heated, add the refined oil and swirl the pot to uniformly coat the bottom with the oil. The cumin seeds should be added after the oil is nice and heated and sautéed until fragrant and cracking.

Onions, garlic, and ginger are now added, and they are gently sautéed until they are a light golden brown color. Next, add the spice powders after increasing the heat.

The spices should be well-toasted and highly aromatic after being heated in a high setting. As the oil starts to rise to the top and the masala is thoroughly cooked, add a little water and continue to fry the foundation ingredients.

After thoroughly mixing with salt, add the chicken thighs to the pan. Increase the heat and continue to cook the chicken in the masala until it is a very light golden brown color and evenly covered in the flavor of the foundation.

Add the lemon and orange juices to the chicken at this point and thoroughly deglaze the pan by scraping away the flavorful pan deposits from the pan’s base.

After thoroughly combining everything, add a small amount of sugarcane juice to counteract the acidity of the lemon juice.

When the chicken is practically falling off the bone and perfectly cooked, reduce the heat, cover the pan, and let the chicken simmer for another few minutes.

When the chicken is finished cooking, uncover the pan and boil the light gravy until it is slightly thickened and flavorful. Serve the dish over hot roti’s or rice and fresh coriander as a garnish after turning off the heat.
